They’re light, colorful, healthy, and full of flavor. Vegetable sushi is perfect for beginners and loved for its clean, refreshing taste and beautiful presentation.

You’ll need sushi rice, nori (seaweed), rice vinegar, cucumber, carrots, avocado, and sesame seeds. Optional: pickled radish, bell pepper, or tofu for extra texture.

Rinse rice till water runs clear. Cook, then mix with rice vinegar, sugar, and salt. Let it cool. It should be sticky but not mushy is the goal!

Cut veggies into thin, long strips. They should be crisp, fresh, and easy to layer. Aim for both crunch and color in every bite.

Place a bamboo mat on a flat surface, top with plastic wrap, then a sheet of nori. Keep a bowl of water nearby for sticky fingers!

With wet fingers, gently press rice over two-thirds of the nori sheet. Keep it thin and even. Don’t mash it flat. Leave space to seal the roll.

Layer your veggies across the center of the rice. Use the mat to roll tightly from bottom to top, applying gentle but firm pressure.

Use a sharp knife dipped in water. Slice in one motion. Don’t saw the rsushi roll. Wipe the blade between cuts to keep each sushi piece perfect.

Arrange sushi rolls on a plate. Add soy sauce, pickled ginger, and wasabi. Optional: A drizzle of spicy mayo or sprinkle of sesame seeds.
