Choosing the  Right Chicken for Curry

Boneless chicken thighs are best. They stay juicy and tender. If you prefer lean meat, Chicken breast works too, but don’t overcook it.

Sauté the Curry Paste to Release Flavor

Start by sautéing green curry paste in a bit of oil. This step wakes up the spices and gives your curry a bold, aromatic base.

Add Coconut Milk  for a Creamy Base

Slowly pour in the coconut milk and stir. Let it simmer gently. It should be rich, slightly sweet, and beautifully fragrant.

Time to Add  Chicken and Cook Through

Add the chicken pieces and let them cook in the sauce. Keep the heat medium so the meat stays tender and absorbs all the flavor.

Add Fresh Veggies  for Texture and Color

Toss in bell peppers, zucchini, or eggplant. These veggies stay slightly crisp and soak up the coconut curry beautifully, adding texture to every spoonful.

Season with Fish Sauce,  Sugar, and Lime

Balance is key. Fish sauce adds saltiness, sugar adds sweetness, and lime juice or leaves bring in that citrusy kick Thai food is known for.
