What Makes Preserved  Lemons So Unique?

Preserved lemons offer a deep, salty-sour flavor you can’t get from fresh lemons. They bring balance and brightness to this rich dish and are a Moroccan pantry staple.

Marinate the  Chicken in Spices First

Coat chicken pieces in turmeric, ginger, garlic, cinnamon, saffron, and olive oil. Let it marinate for at least 1 hour to allow the flavors to deeply penetrate the meat.

Sauté Onions and  Aromatics for the Base

Cook finely sliced onions with olive oil until soft and golden. Add garlic and marinated chicken. This forms the flavorful base of the tagine and infuses it with warmth.

Add Preserved Lemons and Olives

Tuck in sliced preserved lemons and scatter olives around the pot. These ingredients will slowly melt into the dish, giving it that signature Moroccan depth and salty-sour tang.

Simmer Gently in  a Tagine or Heavy Pot

Cover and cook on low heat for 1.5 to 2 hours. A tagine pot is ideal, but any heavy-lidded Dutch oven works. The chicken becomes tender and flavorful.

Finish with Fresh Herbs  and a Squeeze of Lemon

Just before serving, sprinkle with chopped parsley or cilantro. A fresh squeeze of lemon juice lifts the dish and brightens the intense, earthy flavors.

Best Served with  Couscous or Crusty Bread

Chicken tagine is perfect with fluffy couscous or warm Moroccan flatbread to soak up the delicious sauce. A side of mint tea completes the meal.
